I picked up a 2017 Polaris Sportsman 850. The previous owner rarely rode it and it only had 53 miles on it (10 hours). I believe the Polaris break in period is something like 250 miles / 50 hours or something like that at which point they suggest doing the first oil and fluid change. My question is should I do it sooner than that? I believe this was manufactured in fall of 2016 so that means the fluids in there are 3 years old. Maybe that isnt a big deal and it is still fine to wait until 50 hours, but just wanted to check

No problem.  Proper maintenance will keep that machine running many years.  
Keep a small log book as well so you remember the dates and what you did etc.  This is good for a few reasons one being your own knowledge second is having documentation like that if and when you sell/upgrade to a new machine the new buyer feels good knowing there is a well documented maintenance log on atv he/she is buying.

FWIW, I have a 2019 Sportsman 850 SP and break-in is 25hrs or two full tanks of gas according to owners manual. First service interval is 25hrs regardless. 

I have 110 miles and two tanks burned, but still have about 10hrs left before service interval. So my break in is done, but my service interval is not due yet.
